Veal Loaf

Yield: 6 - 8 servings

Ingredients

  • 2 pound lean veal
  • 4 teaspoon onion salt
  • 1/2 pound salt pork
  • 1 tablespoon salt
  • 6 large crackers
  • 1/2 teaspoon pepper
  • 2 tablespoon lemon juice
  • 4 tablespoon cream

Directions

  1. Put two crackers in the meat grinder, add bits of meat and pork and the rest of the crackers.
  2. The crackers first and last prevent the pork and meat from sticking to the grinder.
  3. Add other ingredients in order named.
  4. Pack in a well-buttered bread-pan.
  5. Smooth evenly on top, brush with white of an egg and bake one hour in a moderate oven.
  6. Baste frequently.
  7. The meat may be cooked in a fireless cooker between two stones.
  8. It is perfectly satisfactory cooked this way, and requires no basting.
